It's what's for dinner! Cheesy ham & hashbrown casserole!

So I adapted a recipe I already had and made my own. Haven't tasted it yet...it's in the oven as we speak, but it smells delicous. Easy too! Can you tell I'm into comfort food? Thought I'd share:
Kari's Cheesy Ham & Hashbrown Casserole:
Ingredients:
1 pkg. southern style hashbrowns (thawed)
1 c. 2% shredded cheese (I used sharp cheddar)
1 can reduced fat crm. of mushroom soup
1 16 oz. container of fat free sour cream
1/2 pkg. diced cubed ham (1 lb. package)
1 small onion (diced)
salt & pepper to taste

Directions:
Spray 9x13 pan with cooking spray. Mix all ingredients together, pour into pan, bake at 350 for 1 hour.

  2. Thanks Allison! The casserole WAS yummy! I can't wait for David and Bekah to try it (not home from work yet). Even Taya liked it, although she managed to find every little piece of onion, lol. It's gonna be a new favorite I think!
