Yes I'm a Slacker...no not really, lol & Food Journal 10/18/10

Well well well... it's been a couple of days folks. A very busy couple of days, I promise! On Sunday, we attended a Naval Academy Parent's Club meeting in Bloomington, IL. It was nice to be able to catch up with other "Mid" moms and dads. The food was delicious as well! I had made up my mind to not count points for the day, so pretty much ate what I wanted. I kept the rest of it pretty much in check though, so hopefully the scale won't hate me too too much on Friday. Yesterday was soooo busy at work. It seems like most days are like that. I'm an Outreach Worker at a local middle school for those who don't know. I work with "at risk" students and families, truancy prevention/intervention, individual/group counseling, home visits, etc. This is my 10th year and it seems like each one is busier than the last. Usually at the beginning of the year, there is a little bit of a lull but this year started off with a bang and hasn't slowed down since! I find myself hardly getting a lunch break and staying late most days just to keep up! After work yesterday, I came home and made a yummy "stovetop stuffing" meatloaf for dinner and then headed to a college fair with Bekah. By the time I came home, I was BEAT! I actually fell asleep on the couch at the end of DWTS and just woke up about 45 mts. ago. Yes folks...that's 4:30 am, lol. Since I'm up so early, I am sure tonight will be another early to bed night. I did pretty well with my eating yesterday, but STILL have yet to start getting that exercise in. It's something I know I need to do, but have to make a plan to fit it in or else it's just not going to happen. This blog won't let me cut and paste, but here is the meatloaf recipe:

It's very simple- 2 lbs. of 96% lean ground beef, 1 pkg. of stove top stuffing (I used the cornbread variety), 1/2 c. eggbeaters, 3/4 c. water, a bit of ketchup, and diced onions/green peppers (optional). Mix it all together, form into TWO loaves, put into 9x13 baking dish, put some ketchup or barbecue sauce on top, bake at 350 for 45 mts. or until meat is no longer pink. Makes 8 big servings at 5 ww points per serving. Yummmmmmmmyyyy- comfort food!
