Well folks...let's just say it's been awhile. Life's obstacles have kind of gotten in the way of my blogging. Up until this past weekend, I have been doing pretty good on eating right. My grandpa passed away a couple of weeks ago and there has been some family issues as well...needless to say there were some very stressful days thrown in there. Fo the most part, holding up though, trying to eat right & exercise. THEN came the weekend, lol...make that Thanksgiving, Black Friday, then Chicago with my kiddos for 2 days...let's just say Monday morning weigh-in was not friendly. We have less than 3 weeks left of our Biggest Loser contest at work and while it'll be really difficult to get that 1st place title, I'm hoping for at least 2nd place. I still need to get on board with the working out, but all things in good time. TODAY'S journal:

I'm still around....

I haven't deserted...I'm still here. Had a bad eating weekend and was hoping to make up for it with good eating and lots of exercise this week. My back has other ideas though.... I threw it out somehow or another and was just dying yesterday/last night. It has gotten better throughout the day today, so I'm hoping maybe by Thursday it will be good enough to get some exercise in. So far so good on the eating front this week. Just been very busy so haven't had time to actually post journals...will try to get back posting this week though.

Grrrrrr! Food Journal 11/4/10

I've been so tired this week, have hardly had time to post my journal. Rest assured...I HAVE been counting points. Did fine on Wednesday- stayed within points. Stepped on the scale this morning hoping for a loss after trying to make up for Saturday's binge fest all week, but my body has decided to NOT cooperate, lol. Actually though, that's not fair- I have no idea how many lbs. that binge fest actually put on over the weekend, but I have been trying to make up for it all week. Maybe I gained 5 lbs. and lost it over the past several days? I'm thinking that's highly likely, but since I only step on the scale once a week, it's hard to tell. Have weigh-in at work this morning and it's probably going to be about the same, maybe a little up or down from last week. I know I have to step up the exercise since I'm starting to slow down. I hate Halloween! & Food Journal 11/1/2010

Wow...hard to believe it's November already! Well, I managed to get through the weekend- although not as well as I'd hoped. While Saturday was a planned "cheat" day, I think I definitely took it too far. The day started at the bowling alley's Halloween party at 9am...a virtual "Pot-luck" of cookies, candy, cupcakes, and other assorted goodies- and it didn't get much better from there... A trip to BWW's and trick-or-treating Sat. night....I think I was comatose before my head even hit the pillow that night. Now...yesterday I knew there would be even more candy temptations, so I practically starved myself all day so I could eat even more candy, lol. Even so...probably ate more than I should have. Today is a new day. Even though it was a very busy/exhausting/emotionally draining day at work, I have done well and even EXERCISED purposely for the first time in months. I think the binge junk food eating was a good motivator, lol. I have a gazillion exercise videos, but it seems that I always fall back on my tried and true..... Richard Simmons' Sweatin' to the Oldies- yeah! Taya decided she wanted to exercise with me....about 10 minutes in she asked "Is that a boy or a girl?" hahaha. About 5 minutes later she gave up and I had to sweat solo. When I was at my very heaviest weight ever and was too embarassed to go to the gym and too out of shape to do most other videos, Richard was there for me! Believe it or not, I think the tapes I have now are my mom's tapes that she got when I was a kid! That's okay though...at least they get me moving! My goal....at least 3 days this week- and we'll see from there. Today's journal:

Yummy 5 point Chili Mac




Ingredients:


1 lb. 96% lean ground beef
1/2 chopped onion
1 can Rotel
1 can diced/stewed tomatoes
1 c. chili beans
1 can healthy request tomato soup
1.5 c. elbow macaroni
chili sauce to taste (optional)
chili seasoning

Brown ground beef & onion. Cook elbow macaroni while beef is browning. Add chili beans, diced tomatoes, rotel, soup, chili sauce, and seasonings and simmer on stove top. Drain macaroni and add to mixture. Allow to simmer a few more minutes and Voila- chili mac! Top with 2% shredded cheese and/or light sour cream, but be sure to add the points.

Makes 6 1-cup servings at 5 WW points per serving.








Thoughts & Food Journal 10/24/10

Sunday night....ugh...I hate Sun. nights. Having the work week to look forward to, lol. Went to see the movie Paranormal Activity 2 last night- I had heard mixed reviews, but I really thought it was scary/good! Obviously, I had to have popcorn at the movie theater....just HAD to, hehe- but yesterday was my cheat day- didn't count but am assuming I used all my flex. Did pretty well today- made chili mac for dinner, which was super yummy. Will post the recipe separately. I started taking a supplement called 5-HTP again- it's something I tried for a short time last year but never did take it seriously. It is a prescribed supplement in some countries and has tryptophan like properties, which increases seratonin in the brain. The benefits include stabilizing of moods, better sleep, and decreased appetite which I really need! I remember when I took it for a short time before, I did feel very calm and less stressed. I still had some left, so I took one last night and this time around, it has had the opposite effect- I was on edge all day today and kind of foggy/irritated/sick as well. When I looked this up online, it said for people with anxiety it could have the opposite effect for the first week or so and then it should get better. The capsules I have are 100 mg, so I thought I'd try 50 mg instead and see how that is. I am almost afraid to take the 100 mg again tonight for fear that I will feel the same way tomorrow...I haven't yet gotten the lower dose capsules. Once I get those I'm going to give it at least a couple of weeks and see how I'm feeling after that. I am totally not a health foods/supplement/vitamin freak type of person but I know that this has been a lifesaver for many people with stress/anxiety/depression type issues and I think I'd rather go the "natural" route first before I would consider anything else. Anyway...just thought I'd share.... I think I will add a line at the bottom of my journal with my general mood as well.

Down another 3 lbs. this week for a total of 8.8 in the past 2 weeks. Still a long way to go but I feel like I'm moving in the right direction! Another busy day, didn't get a chance to eat breakfast or lunch, so just grabbed what I could. Went to DQ around 2pm to fulfill a promise I made to a couple of my students. By that time I was starving, so I got an Arctic Rush. Good choice for only 4 points I suppose, but still a very NONnutritional eating day.

Am feeling a bit better about life tonight due to a very sweet girl named Cloee who kind of forced me to confront some things I've been wrestling with. Thanks Cloee :)

Strange Dreams, Worries, &Food Journal 10/21/10

So I had yet ANOTHER dream about my teeth falling out (second or third one in the past week or so). This time, every time I looked in the mirror, I had more holes in my teeth and I was really upset because I didn't know how to stop the holes/cavities from forming. Eventually, they all started falling out. Bekah looked it up in this "Dream Encyclopedia" we have and it said :

"Losing the teeth may reflect a loss of power as well as a loss of one's grasp of life circumstances."

Hmmm....how true this is! I have been feeling SO overwhelmed and out of control lately. Just trying to keep up with life is a chore and I've been forgetting little things here and there despite the fact that I am pretty well organized. Work has been really keeping me on my toes and I never feel like I have enough hours in the day to get everything done. I HATE that feeling of things left undone. I do believe I have some issues with anxiety, so it really gets to me when I feel like things are up in the air. I like having a set routine and some predictability in my life. In addition to work stuff, still getting used to David's new schedule at work and lots of worries in helping Bekah get her Exchange application completed, as well as what all is to happen with that. While I am excited for her, I still have alot of reservations about the whole thing and her ability to be self-sufficient and independent enough to be away from home for a whole year.
I really wish I could just have ONE day of not having to fret or worry- one day all to myself to just relax, read a book, cuddle up. It will never happen because even if I did have that day, I would spend it making sure that the house is clean, the laundry is done, the bills are paid, and any number of other tasks that always seem to pop up and need taken care of. For some reason, I can't relax unless I feel I've accomplished something. When I come home from work, I take care of business- cook dinner, take Taya to ballet/gymnastics, go through backpack, pack lunches, set out clothes for the next day, take care of the dog, straighten/clean up, get Taya's bath, bedtime routine/snack, shower, etc. I don't/can't allow myself to just sit and rest until all is done. Then and only then do I sit down to catch up on FB/blog/read. I didn't used to be that way...maybe it comes from being a single mom all those years and having to make sure I was on top of things...

Am I abnormal or are other people like this too?

It's what's for dinner! Cheesy ham & hashbrown casserole!

So I adapted a recipe I already had and made my own. Haven't tasted it yet...it's in the oven as we speak, but it smells delicous. Easy too! Can you tell I'm into comfort food? Thought I'd share:
Kari's Cheesy Ham & Hashbrown Casserole:
Ingredients:
1 pkg. southern style hashbrowns (thawed)
1 c. 2% shredded cheese (I used sharp cheddar)
1 can reduced fat crm. of mushroom soup
1 16 oz. container of fat free sour cream
1/2 pkg. diced cubed ham (1 lb. package)
1 small onion (diced)
salt & pepper to taste

Directions:
Spray 9x13 pan with cooking spray. Mix all ingredients together, pour into pan, bake at 350 for 1 hour.

Points Info:
Cut into 8 square servings= 6.5 weight watcher points per serving
Cut into 6 square servings= 9 weight watcher points per serving

Thoughts & Food Journal 10/19/10

Well...I did it yet again- fell asleep ON THE COUCH! GRRRRR! I HATE when I do that! I went through a period last year where I was doing that and then David won't wake me up when I do. I think he just likes the big ol' bed to himself, lol. It's 3:30 a.m. this time though, so I do believe I'll go back to sleep for a couple of hours. I was knocked out let me tell you! Didn't even hear David come in from work. I did catch DWTS results show and am very glad Florence Henderson got voted off. I liked the Brady Bunch when I was a kid as much as the next girl and Florence did a great job for someone her age, but it just had to happen and I'm glad it was sooner rather than later. Although....I probably would have been happier had Bristol Palin been voted off first. Anyway... I only caught the 1st part of Biggest Loser before I fell asleep, so I'll have to catch up via DVR tonight or tomorrow. Total change of subject, but I booked baby boy's flight home for Christmas and didn't have to pay quite as much as I did for his Thanksgiving flight. Getting very excited to see him over the holidays, although I'm sure his girlfriend and friends will have a monopoly on his time. Oh well, he deserves it! As for the girls, all is well. I spoke to Bekah's school counselor today about the exchange program and it looks like all is pretty much in shape so far as credits- she will have all of her required courses done by the end of this year (jr year). Miss Mataya had to sit at her desk today during free choice time, according to her. Evidentally, they were coloring a paper and the boy next to her was not finished, so she decided to color his paper for him because he wasn't done yet and they were supposed to be done in order to do free choice. However....she scribbled all over his paper in order to be done QUICKLY and that was not a good thing, lol. My girl loooooves free choice time, so that was quite the punishment. Grrr...she is such a little boss- not sure what the future holds so far as interpersonal relationships :). Well...better get this journal posted so I can catch a couple more hours of sleep.

Well well well... it's been a couple of days folks. A very busy couple of days, I promise! On Sunday, we attended a Naval Academy Parent's Club meeting in Bloomington, IL. It was nice to be able to catch up with other "Mid" moms and dads. The food was delicious as well! I had made up my mind to not count points for the day, so pretty much ate what I wanted. I kept the rest of it pretty much in check though, so hopefully the scale won't hate me too too much on Friday. Yesterday was soooo busy at work. It seems like most days are like that. I'm an Outreach Worker at a local middle school for those who don't know. I work with "at risk" students and families, truancy prevention/intervention, individual/group counseling, home visits, etc. This is my 10th year and it seems like each one is busier than the last. Usually at the beginning of the year, there is a little bit of a lull but this year started off with a bang and hasn't slowed down since! I find myself hardly getting a lunch break and staying late most days just to keep up! After work yesterday, I came home and made a yummy "stovetop stuffing" meatloaf for dinner and then headed to a college fair with Bekah. By the time I came home, I was BEAT! I actually fell asleep on the couch at the end of DWTS and just woke up about 45 mts. ago. Yes folks...that's 4:30 am, lol. Since I'm up so early, I am sure tonight will be another early to bed night. I did pretty well with my eating yesterday, but STILL have yet to start getting that exercise in. It's something I know I need to do, but have to make a plan to fit it in or else it's just not going to happen. This blog won't let me cut and paste, but here is the meatloaf recipe:

It's very simple- 2 lbs. of 96% lean ground beef, 1 pkg. of stove top stuffing (I used the cornbread variety), 1/2 c. eggbeaters, 3/4 c. water, a bit of ketchup, and diced onions/green peppers (optional). Mix it all together, form into TWO loaves, put into 9x13 baking dish, put some ketchup or barbecue sauce on top, bake at 350 for 45 mts. or until meat is no longer pink. Makes 8 big servings at 5 ww points per serving. Yummmmmmmmyyyy- comfort food!

Woohoo! Lost 5.8 lbs. this week! Awesome...considering I pigged out Sat-Monday and was only "on track" Tues-Thurs, lol. Going to really try to stay on track tomorrow (weekends are my downfall!), so that I can enjoy some good food on Sunday. David and I are going to Bloomington for a Naval Academy Parent's club meeting/pot luck and Italian beef is on the agenda...yummmm! Splurged on Pizza Hut tonight, but kept it to a personal pan.

Is it Friday yet? & Food Journal 10/14/10

What a day...I got through yet another one! Just trying to get in a few minutes of relaxation before I fall asleep. Just got a phone call from the Rotary exchange people asking for Bekah to call them when she gets home...guess we'll find out if she passed through this round of the interview for the foreign exchange program. Good old Walmart changed up David's rotation, so he is off for the next 4 days which is nice. All of the managers are being switched up due to trying to get some things done and be more efficient during the time they're there. Only thing is I had to scribble out 2 months of days on/off in my calendar. Hopefully they won't mess with it for awhile so we can plan ahead for certain things. Oh well...as they say in the Marines....Semper Gumby (in other words...always be flexible). Haven't heard from my firstborn since Monday. Sure hope his week is going well. I was really excited for him this past weekend, as he got to leave the academy and spend the day with my husband's family. Nice for him as well as them I imagine. Anyway....our first weigh-in for our Biggest Loser contest at work is tomorrow and I am determined to do well in this contest. Not sure that this week will be great though as last weekend was my final pig-out session and since it was a 3 day weekend and I've only had 3 days to make up for it......oh well. What's done is done and hopefully it will be ok. Here goes:

Thoughts & Food Journal 10/13/10

What a day...whew! Is it only Wednesday? Really? A full day at work today...helped chaperone about 50 jr. high students to Wal-Mart for our annual Shoe Project at work...helping all those little darlings chose a brand new pair of shoes or boots in about 1/2 hour was fun, lol. On top of that, I had my usual lunch duty, taking home sick kids, picking up truant kids, calling parents, dealing with a couple of meltdowns, my development class with 8 students who have behavior problems AND to top it all off had a staff meeting after work! THEN...I had to go get Bekah and take her to get her car which was in the shop so she could get to piano lessons by 4:45, pick up Taya at PALS, come home and make dinner, get Taya ready for ballet and then THANK GOODNESS for grandmas because grandma took Tay to ballet while I took Bekah to her first interview for the Rotary Exchange program interview. It's hard to believe that next year she might be gone...we shall see how the process goes. Interview went well....just waiting to hear back. Anyyyywayyyy.... did pretty good with my food today (although the McDonald's coke wasn't really necessary, lol), but am struggling trying to fit in exercise just yet. It WILL happen...just gotta figure out when.

Intro

What a day....some days are just like that I guess, but I sure wish the 1st day of my blog could have been a more upbeat, positive type of message. Just a challenging day....teenagers! Need I say more? Well...my purpose here is to have a place to go to share funny stories, vent, and also to keep myself accountable. I plan on at least posting my daily food journals on here and appreciate and welcome all comments, ideas, & suggestions. I lost over 100 lbs. and made my Weight Watcher's goal 3 years ago and maintained it for quite awhile....but this past year has been rough and I voluntarily fell off the wagon...in a very big way. I have about 50 lbs. to get back to my Weight Watcher's goal and almost 60 to go to reach my personal goal. I hope...no- I WILL be there within the next 7 months. By my 37th birthday at the end of May, I will be at GOAL!!!!! Now....deep breaths and baby steps....
